 Quinoa and Black Bean Stuffed Peppers

Ingredients:

- 4 large bell peppers

- 1 cup quinoa

- 1 can black beans, drained and rinsed

- 1 cup salsa

- 1 teaspoon cumin

- 1 teaspoon chili powder

- 1 cup shredded cheese

Instructions:

1. Preheat oven to 375°F.

2. Cut the tops off the bell peppers and remove seeds and membranes.

3. In a large bowl, mix together quinoa, black beans, salsa, cumin, and chili powder.

4. Spoon the quinoa mixture into the hollowed-out bell peppers.

5. Place stuffed peppers in a baking dish and cover with foil.

6. Bake for 30 minutes, then remove foil and sprinkle shredded cheese on top.
